一、茶叶分类相关术语
According to the degree of :fermentation ,rolling, baking and tea leaf maturity 根据制造时发酵，揉捻焙火与采摘时原料成熟度来分类
Non-fermented 不发酵茶，即绿茶
Post-fermented 后发酵茶 即普洱茶
Partially fermented 部分发酵茶，半发酵茶，即乌龙茶（铁观音、武夷岩茶）
Complete fermentation 全发酵茶，即红茶
（1）绿茶分类术语：
Steamed green tea蒸青绿茶 Powered green tea 粉末绿茶
Silver needle green tea 银针绿茶 Lightly rubbed green tea 原形绿茶
Curled green tea 松卷绿茶 Sword shaped green tea剑片绿茶
Twisted green tea 条形绿茶 Pearled green tea 圆珠绿茶
（2）普洱茶分类术语：
Age-puer 陈放普洱 pile-fermented puer 渥堆普洱
（3）乌龙茶分类术语：
White oolong 白茶乌龙 twisted oolong 条形乌龙
Pelleted oolong 球形乌龙 roasted oolong 熟火乌龙
White tipped oolong 白毫乌龙
（4）红茶分类术语：
Unshredded black tea 功夫红茶 shredded black tea:碎形红茶
（5）熏花茶分类术语：
Scented green tea 熏花绿茶 scented puer tea 熏花普洱
Scented oolong tea 熏花乌龙 scented black tea 熏花红茶
Jasmine scented green tea 熏花茉莉
上述各类如果假如食品或香料，就成为调味茶（spiced tea），如果加到绿茶，则成为：spiced green tea 调味绿茶，以此类推。

P代表： Pekoe 带有白毫的嫩芽 O代表： Orange 嫩芽完全没有叶绿素如橘色般的意思 B代表： Broken 碎型茶 F代表： Fanning 片型茶 指BOP筛选下来的小片茶叶。 D代表： Dust 枌尘状般的细末茶 筛选到最后的粉末状碎屑。多以茶包型式出现。 G代表： Golden 黄金色的光辉。 T代表： Tip 含有大量新芽。 S代表： Souchong 小种红茶。 1代表： no.1 代表在该等级里为顶尖的级次。 OP(Orange Pekoe):常见的等级指的是叶片较长较大而完整的茶叶。 BOP(Broken Orange Pekoe)制成较细碎的OP，叶片较小。滋味较浓重，一般适合用来冲泡奶茶。 FOP(Flowery Orange Pekoe) 含有较多芽叶的红茶。 TGFOP(Tippy Golden Flowery Orange Pekoe):含有较多金黄芽叶的红茶。 FTGFOP(Fine Tippy Golden Flowery Orange Pekoe):经过精细地揉捻精制而成的高品质茶叶。 SFTGFOP(Special Fine Tippy Golden Flowery Orange Pekoe):多了「Spepecil」一字，自然粉高贵罗。 采摘,picking 萎凋,withering 晒青,sunshine withering 做青,making green 杀青,water removing 揉捻,rolling 做形,shaping 整形提毫,trimming & tipping 窨花,scenting 辉干,final roasting 精制,refining
